Preheat oven to 400 degrees & butter both of the muffin pans2. Melt chocolate in either a melting pot or on the stove. (Place chocolate in pot and stir while on low heat until it's smooth.) 3. Ingredients:
1/2 cup unsweetened shredded coconut (save 1-2 TBSP for topping)
4 TBSP Coconut oil
2-3 TBSP unsweetened cocoa powder
1 teaspoon pure vanilla extract
2 TBSP maple syrup (or similiar)

- Place all the ingredients except for topping, in a shallow bowl.
- Use a fork to mix it together.
- Form into about 8 balls
- If mixture becomes too soft to work with, refrigerate for 5 minutes and continue making.
- Place the chocolate balls on a platter lined with wax paper.
- Sprinkle topping on.
- Put in refrigerator for 15 minutes then enjoy!
