Warm Coconut Cookies

Are you ready to take your baking to the next level? Warm Coconut Cookies are a great way to start. They're delicious and healthier than store-bought cookies. Plus you get the added bonus of knowing you made these yourself! 
Most of my recipes have short simple ingredient lists. Warm Coconut Cookies are an exception to the rule with about 10 ingredients, but most of these you already have in your kitchen or are easy to find in the store. So let's get baking and leave the butter in the fridge cause these cookies are butter free! 

INGREDIENTS

  • 1 tbsp Ground or Whole Flax Seeds 
  • 3 tbsp Warm Water 
  • 1 cup Flour or Flour Substitute 
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt 
  • 1/4 cup softened Coconut Oil 
  • 1/2 cup Brown Sugar
  • 1 tsp Vanilla 
  • 2 tbsp Milk or Milk Substitute
  • 1/4 cup Oatmeal 
  • 1/4 cup Coconut Shavings  

Preparation 

1. Preheat oven to 350 and get a baking sheet out 
2. Get all your ingredients measured out and set aside 

 Instructions 

1. In a LARGE bowl, add flax seed and warm water 
2. In a second bowl, add flour, salt and baking soda
3. Add coconut oil, brown sugar, and vanilla to LARGE bowl and mix until blended
4. Add the contents of the second bowl with the flour to the LARGE bowl and keep stirring. (If it gets too dry, add milk) 
5. Slowly mix in oats and coconut shavings
6. Place spoonfuls of this mixture on baking sheet 
7. Bake in oven about 8-10 minutes
8. Allow to cool then sprinkle with extra coconut shavings or chocolate if you're feeling naughty

Fruity Tooty Brownie Bars

​Recipe from Green for Clean Desserts: 50 Delicious and Easy Clean Eating Recipes by Annie Grapes

INGREDIENTS 

  • 1 Cup of Pecans OR 1/2 cup pecans and 1/2 cup almonds
  • 1 Cup of Dates 
  • 5tbsp cocoa powder 
  • 2tbsp agave OR maple syrup OR honey
  • 1/4 tsp salt ​

INSTRUCTIONS 

  1. Get out your blender and prepare measured ingredients 
  2. Mix nuts in your blender until crunched up 
  3. Add dates until well mixed
  4. Add the rest of the ingredients and blend until smooth 
  5. Remove from blender and mash mixture into an 8x8 or 8x9 pan with a spoon
  6. Place in fridge for at least an hour to harden up 
  7. Cut your brownie bars into squares, circles, rectangles, octagons, or triangles... get crazy with your bad self 
  8. Serve with berries, syrup, whipped cream, or just eat plain as a power bar! Mmmm Mmmmm...

Ingredients

8 cups watermelon
1 juiced (squeezed) lime
​1/4 cup fresh mint leaves 

Optional: Feta Cheese 

Anybody can randomly chop up watermelon and hand it to you. Some people know how to cut it right, and few know how to "serve" watermelon- like it's fine dining. We here at Eat2Live2Love understand what a budget is, and we also know you wanna look good while on that budget!  So spend $5 and buy a watermelon, cut it, then create this unique serving suggestion recipe. 
Just combine the ingredients, mixing it up in a large bowl, refrigerate for a few minutes and serve in a pretty bowls and fancy forks. Your $5 melon is now one in a million! Way to go!

Ingredients 


Parchment Paper
1/2 cup blueberries
1 Mango, Diced 
3-4 Strawberries
1 cup of Organic Greek Yogurt (per fruit)
1-2tsp of honey (per fruit) 
Linda's Tip: Don't Microwave the nutrients out! Use the stove instead.

Make Chickpeas That Taste Like Cheetos

Thanks to the cooking geniuses at TheKitchn.com, you can now feel naughty while still being nice to your body. Chickpeas are a great source for vegan protein; just 1 cup gives you 15g of protein! Of course, they also contain minerals (like all beans) such as  Fiber, Folate, and Manganese.

Ingredients


Directions


  • 1 can (15 oz) of unsalted chickpeas, or better- make your own. ​
  • 1tblsp of organic olive oil 
  • 1/2 teaspoon iodine free salt 
  • 3 tablespoons nutritional yeast
  • 1/2 teaspoon iodine free salt
  • 1/2 teaspoon granulated garlic 
Preheat the oven to 400°F. 
Drain, rinse and pat dry chickpeas.
Mix oil and salt with chickpeas.

Bake for 30 min, flipping the chickpeas every 10min or so until crispy. 

Whisk together the remaining ingredients together and sprinkle over chickpeas when done. 

​Tip: They taste best right outta the oven!

  • 1/2 cup fresh Blueberries
  • 1/2 cup unsweetened granola
  • yogurt 
  • chia seeds

Sweet tooth calling your name? Don't want to fall off the wagon? The Sweet Blueberry Crunch is sinfully sweet-and yet still good for you! Perfect as a brunch, snack, or even dessert. Simply mix all these ingredients up in a bowl, or layer them for a fancier effect- either way you'll be in blueberry crunch heaven. 
*Reminder: Both yogurt and granola can be high in sugar, so make sure you read the label to get the cleanest versions avaiable to you.

Make Your Own Vegetable Dip from Scratch

  • 1/4 red onion, peeled
  • 1/4 carrot 
  • 1/4 red pepper, seeded
  • 8 oz cream cheese or cream cheese substitute
  • pinch of pepper 

It's Easy!

Just toss those ingredients into your blender and go! Yum yum Yum!

Incredible Homemade Almond Butter

Easy Ingredients

  • 3 cups raw almonds
  • 1/4 cup coconut oil 

Add into Blender and Go!
After making your creamy butter, store in a jar in a cool, dark place. (NOT the fridge)
     Making your own Almond Butter once every few weeks  or once every few months, is a great way to save money AND eat clean. Keep in mind, it's loaded with fat, but good fat! Yes, there is such a thing as good fat. Want healthy hair, soft skin? How about a healthy heart and optimal brain function? 
Many Members like to add in honey and/or cinnamon, or use it in a recipe to make their own Almond Butter and Jelly cookies using blended dates and honey. 
Anything you can do with Jiff or Peter Pan- you can do with Almond Butter plus make it just the way you like it!

Ingredients: 

  • 2/3 cup Pineapple/Apple juice 
  • 1 cup Raspberries
  • 12 Strawberries
  • 1/4 cup of Cranberries
  • A few ice cubes 
This is a sweet treat perfect for summer time! Add in Chia Seeds, Flax Seeds or any extras to boost the benefits to make this a sweet healthy treat. 
Simply add ingredients into your blender and serve! Don't have any cranberries laying around? Swap for a banana and add more texture and potassium.

Quick N' Easy Kale Chips

  • Ingredients
  • What 2 Do

  • 1-2 bunches of Organic Kale (depending on size)
  • Squeeze of a Lemon
  • Sea Salt to taste 
  • 1-2 teaspoons of coconut oil 

Easy! 
Heat oven to
350 degrees
Wash, Chop Kale into 1 inch strips
Mix in bowl with other ingredients  (you can wait until they are cooked to add salt)
Place on cookie sheet 
Bake in oven for 12 minutes.
